Banana Loaf (with local flour)

Ingredients

  • 1 cup wholegrain oatmeal flour
  • ¼ cup cake flour
  • 1 cup sugar
  • Pinch of salt
  • 1 teaspoon bicarb soda
  • 1 teaspoon baking powder
  • ½ tsp mixed spice
  • 1 tsp cinnamon
  • ½ tsp ground cloves
  • ½ tsp ground ginger
  • ½ cup oil
  • 1 egg
  • 200ml lacto
  • 2 ripe bananas

Instructions

  1. Preheat oven to 175 degrees C. Grease and flour a 20cm square pan.
  2. Mash the banana. Mix all dry ingredients together before incorporating the oil, egg and lacto. Add the bananas and mix well.
  3. Pour into baking tray (it should be about 3cm high) and cook until ready! About 40 minutes. Do not overcook.
